Having recently read the substitute Soul Reaper (Quincy), I have a question. If I use one of the summoning skikai abilities, the one that lets me keep using my Zankputo while having summoned it, can I change the form to a bow?

since you'd be keeping your zanpakuto, and your zanpakuto is a quincy bow, then yes. You retain your zanpakuto, yours just happens to be a bow though, and I hope this dosen't seem to harsh, if it's for the game I'm running I'd prefer if you didn't use the summoning type just because of how stupid-broken the one on the wiki is. If you ask TMK nicely he may send you the summoning prototype I'd be happy to let you use, but not the one on the wiki sorry

Also, what type is it when summoned? Because it doesn't mention if it's an animal, a magical beast or something else.

Outsider is the type- the new summoning type IS based on PF's Eidolons, so...

Not until you have level 5 in the PrC or if you take the zanpakuto power that lets you switch between melee and ranged weapon forms. I knew there was something I forgot to mention in that PrC... So once I have level 5 in the PrC, I can switch between the 2 forms when something is summoned? ...Knew I forgot something. well, you can switch between your zanpakutos form at any time then, so yes. a quincy substitute shinigami's zanpakuto is their bow, and unless otherwise stated it remains a bow.
